One of the wonderful things about the global village is our opportunities to try new foods are almost unlimited. This makes a delightful condiment! The flavor of coconut combines with the sharp bite of chilis and a touch of lime. Next time you're in the mood for a new side dish, give this a try:

Coconut Special
Serve this condiment over jasmine rice  for a delicious change!
You can find packaged unsweetened coconut at most health food stores.
1 1/2 cups shredded, unsweetened coconut (grated coconut works as well)
1 3/4 Tbsp lime juice
1-2 small hot dried chilis, crumbled. (You can add another chiki if you like heat)
Mix coconut and lime juice; stir.
Add chilis, mix well.
Store in airtight container
To serve, sprinkle 1-2 Tbsp over steamed or cooked rice. Basmati is best, but saffron and jasmine rice are also good with this condiment.
